From Ucúquer Vineyard, south bank of Rapel river, central Chile. Aged 6-months in stainless steel tanks. Straw-yellow color; vibrant and round with citrus and mineral notes. Clean finish.

Gran Reserva 2010 Carmenere
From Peumo Vineyard, north bank of the Cachapoal River, central Chile. Aged 13-months in medium-toast French and American oak. Dark purple color; bright black fruit, spice, cedar notes. Supple tannins.

SCHLENKERLA OAK SMOKE

In the middle of the old part of Bamberg, directly underneath the cathedral is the Schlenkerla Brewery and Tavern. It was first mentioned in 1405, and now ran by the Trum family in the 6th generation. It is the origin of the Original Schlenkerla Smokebeer, a Bamberg Specialty.

Terranoble Classic Sauvignon Blanc
“Made from 100% Sauvignon Blanc harvested in March from various vineyards in the Central Valley. The wine is fermented and aged in stainless steel tanks for two months prior to release from the winery.
This Sauvignon Blanc , offers you a wine with an attractive yellow color with greenish tones. It has intense aromas of tropical fruits, especially pineapple. It is a very fresh wine, dry and equilibrated. It has a good structure and a nice natural acidity which has a long permanence in the mouth. Ideal as an aperitif, with seafood and fish.”

Moa Blanc

Moa Blanc wheat beer is brewed using a blend of 65% wheat malt and 35% barley malt which results in an elegantly smooth beer, with hints of spice and uplifting esters. The slightly cloudy appearance reflects its Germanic origins and it’s customary to gently roll the bottle before opening to create an even distribution of the sediment signature.

Tasting Notes

Moa Blanc has a fruity aroma and taste. Banana, vanilla, citrus and bubble gum fruit flavours dominate, with some phenolic characters present.  Moa Blanc is a highly drinkable wheat beer, with flavours more moderate than other wheat beers.  Hop aroma and bitterness are minimal.  Moa Blanc is best served at approximately 4˚C in a pilsner glass.

Moa Noir

Moa Noir is a traditionally brewed European style dark lager with an abundance of distinct aromas and flavours. Chocolate and richly roasted coffee beans dominate the senses with a full flavoured palate, giving Moa Noir a long smooth finish. A perfect beer for the changing of seasons.

Tasting Notes

Moa Noir is a European style dark lager/ Munchner Dunkel.  It is a dark brown beer with hues of red and a characteristic strong white foam.  Malt dominates with chocolate, coffee and biscuit flavours apparent.  Bitterness is low to emphasise malt flavours.  Subtle bitterness rounds out the after taste and mouth feel.  Hop aroma is minimal.  Moa Noir is best served at approximately 6˚C in a pilsner glass.

“Despite its name, a Barleywine (or Barley Wine) is very much a beer, albeit a very strong and often intense beer! In fact, it’s one of the strongest of the beer styles. Lively and fruity, sometimes sweet, sometimes bittersweet, but always alcoholic. A brew of this strength and complexity can be a challenge to the palate. Expect anything from an amber to dark brown colored beer, with aromas ranging from intense fruits to intense hops. Body is typically thick, alcohol will definitely be perceived, and flavors can range from dominant fruits to palate smacking, resiny hops.

English varieties are quite different from the American efforts, what sets them apart is usually the American versions are insanely hopped to make for a more bitter and hop flavored brew, typically using American high alpha oil hops. English versions tend to be more rounded and balanced between malt and hops, with a slightly lower alcohol content, though this is not always the case.

Most Barleywines can be cellared for years and typically age like wine.”

2010 90+ Cellars Chardonnay Reserve Lot 40 Dry Creek Valley

Story

Pacific ocean breezes gently cool the vineyards of southern Dry Creek Valley producing Chardonnay fruit that is refreshingly juicy and sweet. The result isa wine that’s full bodied with a twang of cool acidity. Fermentation in oak barrels and a second malolactic fermentation also give it a delicate, creamy texture. This is one well pampered Chardonnay.

Taste

Vibrant aromas of melon, pear, and lightly baked apples hover above notes of vanilla bean and flaky pastry dough. the wine’s plump texture is balanced by flavors of fresh orchard fruit and a dose of minerality. It begs to be served alongside grilled scallops, creamy pasta, or roasted chicken, but is equally happy hanging out by itself.

100% Cabernet Sauvignon, Alcohol 13.9 %

Appellation and Vineyard

Tom Larson once owned this single vineyard in the mountains of the Red Hills. This Vineyard is where for the past 10 years, all grapes have been organically grown and sustainably farmed. This appellation sits at the highest section between the Vaca mountain range and the Mayacamas mountain range. The Mayacamas are famous for great Cabernet wine, due in part to ancient pyroclastic soils that contain volcanic glass.

Winemaker Notes

Forward complex blends with ripe fruit flavors; black currant and spicy berry fruit with gentle oak nuances.

A Very Special Holiday Ommegang Beer Tasting @ Harvest Wine & Spirits

Provided by Ommegang & The Hoffman Lane Bistro, Cooperstown, NY

Braised Duck Legs in Apple-Rare Vos Reduction with Prosciutto and Portabella Mushrooms

8 duck legs
½ lb. Prosciutto
8 large Portabella mushroom caps
5 cloves garlic
1 onion
4 apples (of choice) peeled and diced
1 750ml. bottle of Rare Vos
2 qt. chicken stock
½ cup honey
salt and pepper to taste
thyme


Dust the duck legs with flour and sear in hot pan with oil until golden brown. Remove from pan. Discard the leftover duck fat. In same pan sautee garlic, onions, Prosciutto, mushrooms and apples. Add a 750ml bottle of Rare Vos to mixture and reduce by ½. Add the chicken stock and duck legs. Bake at 350 uncovered for 45 minutes or until sauce thickens. Drizzle with honey. Season with salt, pepper and thyme.
